We are passionate about coffee, and we want to share with you how we produce it. Our coffee beans are carefully picked from the trees when they are ripe and juicy. Then we put them in a machine that removes some pulp, but leaves a sticky layer on the beans. This layer is important because it helps the beans develop their flavor and aroma.
We let the beans ferment for 160 hours in a controlled environment, where the sticky layer becomes more intense and attaches to the beans. This is a crucial step for creating a rich and complex coffee.
After the fermentation, we dry the beans slowly and gently. We spread them in thin layers and turn them every 5 days to make sure they dry evenly. The drying process can take up to 25 days, depending on the weather and humidity. During this time, the beans lose their water and become ready for roasting. This is how we make our coffee beans with love and care.
